Amarillo American Wheat – Highest Overall Score at Beer & Sweat 2013

Making a really great Amarillo American Wheat beer that I like to drink has been something I’ve been working on since I first started brewing about 2 years ago. I knew that I really, really like Amarillo hops and thought that a balance of bready malt character and hoppy, orange character would be perfect. I’ve brewed well over 10 variations of this basic recipe and finally have it dialed in. It scored a 42.3 at Beer and Sweat (but didn’t place) and has won several other medals, including a 3rd place in the 1st round of the NHC.

Early versions of this recipe used about 50% Maris Otter and 50% American white wheat, but there was always something just a little lacking with those attempts. I swapped out the Maris Otter for American 2 Row and Light Munich. I ended up increasing the wheat malt to about 60% of the total grist, while barley malt (2 row and light Munich) makes up about 35% with 10% being crystal 10 for a little body and sweetness.

Earlier versions of the recipe were dinged for being a little light for the style, both in body and hop flavor and aroma, so I added a little crystal 10 and some additional flameout hops.

    What was your mash schedule and fermentation schedule in terms of temps and times? Wanting to brew this for the family this summer. Thanks!

      Hi Justin –
      Mash temp was 152F for 60 mins. My notes for this one show that my volume was a little off, so I boiled for a little longer (75 mins). Fermentation temp was in the mid 60’s until it was done. I used my ambient basement temps for everything when this batch was brewed, but if I was doing it again, I’d start it at like 65F and take it up to 68-70F as it started to slow down.

    Thanks! I think I am going to try this out but use the Wyeast 1010 in place of US-05.
